Highland Fling Peaches

 

Peaches are widely available in the summer months here and this makes an easy but sophisticated dessert which is somehow more than the sum of its parts.

2 ripe Peaches
Juice of 1 Lemon
1 tbsp Honey
2 tbsp Whiskey
Double Cream

Blanch peaches briefly in boiling water then peel, stone, slice and arrange in glass bowls. Combine lemon juice and honey in small saucepan and heat gently until honey is melted add whisky and pour over the peaches. Serve chilled topped with whipped cream.
