Hake is a very popular fish all over Spain and Portugal.
It is very delicate and easy to remove the bones before it is cooked.
This recipe is very easy and straightforward and is a meal on its own
with a bottle of Vinho Verde.
4 fillets of Hake about 200gms each
500gms large Potatoes
1 Onion, thinly sliced
1 Green Pepper, thinly sliced, seeds removed
1 Green Chilli
Coriander
Sea Salt
Olive Oil
Blanch potatoes in boiling water for 2-3 mins. Pour a
little olive oil on a flat baking sheet. Lay the fish on an ovenproof
flat tray and surround with onions and green pepper and sprinkle with
chopped chilli and sea salt. Pour over a little more olive oil.
Roast in a hot oven til fish is cooked and potatoes
browned about 20 mins depending on thickness of fish. Garnish with chopped
coriander.
