Pork is the most popular meat in Portugal and is
generally of very good quality. There is also the bonus that it is butchered
so that is resembles the cuts we are used to in England with chops, loin
steaks and fillet all instantly recognisable. The only problem is that
one can have a little too much of a good thing and it can be predictably
cooked in restaurants. This simple recipe does a great deal to enliven
the meat which can be barbecued, grilled or fried or served up as kebabs.
4 Pork steaks or boned chops, cut into 3cm pieces
1 Onion, chopped
1 clove Garlic, chopped
Leaves from one bunch of Mint
2 tbsp Lemon Juice
1 tbsp Olive Oil
1 tsp salt
1 Red Pepper
Blend the onion, garlic, mint, oil, salt and lemon juice
to a paste and use to marinate pork for two hours to overnight. Thread
pork onto skewers with square of pepper and grill, turning frequently,
basting with left over marinade until edges are charred.
Serve with crusty bread and salad.
