Chicken Saté

 

This is basically small cubes of pork or chicken marinated and then grilled either indoors or on the barbecue and served with a peanut based sauce. It is especially delicious served with an oriental cucumber salad.

If you are using wooden skewers it is a good idea to soak them in water while the meat is marinating so that they do not burn too quickly when they are under the grill.

500g lean meat, pork, beef or chicken or a mixture
1 Onion finely chopped (m)
1 tbsp Sugar (m)
2 tbsp Soy Sauce (m)
1 tbsp Lemon juice (m)
1 tbsp Oil (m)
2 cloves Garlic crushed (m)
1 tbsp Chilli Sauce or 1 dried red Chilli chopped (m)
1 Onion finely chopped
1 tbsp Oil
100g Peanut Butter (s)
100ml hot water (s)
1 tsp Sugar (s)
1 tbsp Lemon Juice (s)
1 tbsp Soy Sauce (s)
Chilli Sauce or chopped dried chillies to taste (s)
Chopped Coriander

Cut the meat into small cubes or strips. Combine all the ingredient marked (m) and use to marinate the meat for at least an hour.

To make the sauce sauté the onion in the oil until soft then mix with all of the other ingredients marked (s) stirring vigorously to mix well.

Thread skewers with the meat and grill or barbecue until the meat is browned basting with the remaining marinade. Scatter with the coriander and serve with the peanut sauce to dip.
