Bulgur Salad

 

The list of ingredients may seem long but it isn't essential to use everything to make this healthy and tasty salad. This recipe makes a large quantity but it keeps for a few days covered in the fridge with no ill effects.

125g Bulgur Wheat
30g Walnuts chopped
40g Hazelnuts chopped
1 tsp Sugar
100g Spring Onions chopped
1 Onion chopped
½ Red Pepper chopped
½ Green Pepper
2 sticks Celery
1 Chilli seeded & chopped
4 tbsp Parsley chopped
4 tbsp Mint chopped
2 tbsp Dill chopped
2 tbsp Coriander chopped
1 tsp dried crushed Chillis
1 tsp Paprika
1 tsp Cumin
100ml Olive Oil
3 tbsp Lemon Juice

Put the bulgur in a large bowl and cover with boiling water and leave for 15 mins. Drain in a fine sieve and rinse under cold water and squeeze out the excess water. Make sure that all nuts, herbs and vegetables are very finely chopped then mix thoroughly into the bulgur. Stir in the seasonings, oil and lemon juice. Add about the tomato juice and taste again for seasoning. Leave to stand for about half an hour for the flavours to mingle.
