In the Market in Loulé locally produced
goats cheese is often for sale in various grades of maturity. The best
for this salad is one that is not too soft not too hard ie one that is
just firm enough to slice. Good for when the trees in the garden are groaning
with figs.
200g Goats Cheese
2 Figs
1 Red Pepper
Salad Leaves
3 tbsp Olive Oil
1 tbsp red wine Vinegar
Spear the pepper securely on a kitchen fork, flame
over the gas burner until well charred, place in a plastic bag until cool
then skin and slice the pepper. Put the salad leaves on plates with the
sliced figs on top. Slice the cheese and place on top of figs. Arrange
strips of pepper on this. Drizzle with the oil and vinegar. Serve with
crusty bread.
