Parsley & Gin Soup

 

This is not one for the children but a welcome cooler on hot days round the pool for adults. It is best sipped in small quantities.

250ml Tomato Juice
50g Celery, chopped
75g Onion, chopped
50g Green Pepper, chopped
4 tbsp chopped Parsley
50ml Gin
Salt & Pepper

Liquidise all the ingredients and chill thoroughly.
