Guacamole Soup

 

This is perfect well chilled on a summers evening. The ingredients are really simple and if the avocados are properly ripe it is delicious. It is however rather rich and small portions are all that are required.

2 Limes
2 large Avocados (Haas if possible)
250ml Chicken Stock/water
250ml Soured Cream (Crème Fraiche)
1 tbsp tequila/vodka/gin (optional)
1 dash piri piri/ Tabasco
1 large ripe Tomato
1 tbsp chopped Coriander

Tortilla Chips
60g grated Cheese
1 fresh red chilli finely chopped or 1tsp chilli powder

Squeeze juice from limes. Stone avocado, scoop out all flesh and liquidise with lime juice and stock. Add cream, spirit, piri piri and salt & pepper to taste. Cover tightly and chill for at least 2hrs.

Drop tomato in boiling water to skin, remove seeds and chop up finely.

Place tortilla chips on baking sheet sprinkle with cheese and chilli and grill for 2 mins or so until the cheese is melting.

Place chilled soup in bowls, garnish with chopped tomato and coriander and serve with chips on side.
