Hot Baked Crab

 

This is delicious and quite rich - it makes a lovely supper with just a simple salad, fresh bread and dry white wine.

500g Crab meat (brown and white)
1 Onion, finely chopped
2 cloves Garlic
2 Tomatoes, peeled, seeded and chopped
2 tbsp chopped Parsley
200ml dry white wine
1 tsp Sugar
1 tsp French Mustard
Salt, Pepper & Piri Piri
50g Dry Breadcrumbs
50g grated Cheese (optional)
1 tbsp Olive Oil

Soften the onion and garlic in the oil and add the tomatoes, wine, sugar, mustard, salt and pepper, piri piri, and parsley. Add the crab and heat through for 5 minutes. Pile into empty crab shells, scallop shells or small shallow dishes, top with the breadcrumbs (and cheese if using) and finish under the grill or in the oven for 10 minutes until the top is lightly browned.
