When the figs first start to ripen on the trees they
are a welcome treat. However when they are at their peak there are so
many of them and this is a good way of preparing them for a change.
12 Figs
50g Sugar
50g Butter
Rind from half a Lemon
Wash the figs and roll in the sugar. Grease a pan
with the butter and pack in figs. Pour 3tbsp water over and add the lemon
rind. Cook over a medium heat for about 10 minutes until sugar is caramelised.
Cool in the fridge. Serve very cold with cream or ice cream.
