Baked apples are an excellent healthy dessert which
are often forgotten about in favour of more exotic and more expensive
fruit. This can be made with any small cooking or tartish eating apple
- I particularly like the russet skinned ones. Apples can be baked with
just a bit of butter and sugar down the core hole or some mincemeat but
I especially like this variation which can use home made or bought marzipan.
4 even sized and shaped russet skinned Apples
125g Marzipan
finely grated rind of 1 Orange
30g Butter
4 tbsp Liqueur eg kirsch, cointreau etc
Wipe apples with a damp cloth and carefully remove
core. With the point of a sharp knife cut just through skin around circumference
of apple horizontally. Mix orange rind into marzipan, divide into four,
roll into sausage shapes and use to stuff empty core of apple. Place apples
into buttered baking dish and spread any remaining butter over tops of
apples. Pour liqueur over and bake in a medium oven for 30-45 mins until
very soft. Serve as they are or with cold cream.
