Chocolate Mousse

 

Available on virtually every Portuguese dessert menu yet very simple and much nicer to make at home. The basic recipe can be varied with flavourings such as coffee, orange or any number of liqueurs added to the chocolate and egg yolk mixture.

200g plain Chocolate
4 Eggs
4 tbsp Sugar
2 tbsp Butter

Melt the chocolate over a pan of warm water and mix in the egg yolks, sugar and butter. Whisk the egg whites until they hold their shape then fold gently into the chocolate mixture. Pour into serving dish/glasses and chill. Serve with cream if required.
