Local plums are normally around in the markets in
June and July but plums are widely available all year round in the shops.
Here they are baked lightly to make the juices run with mulled wine type
spices which can be varied according to what is at hand. This is equally
good hot or cold and delicious with vanilla ice cream. A crumble topping
can also be added.
16 Plums
½ bottle Port
2 Cloves
1 stick Cinnamon
1 Star Anise
1-2 tbsp Sugar or Honey
Grated Rind of 1 Lemon
Heat the port, spices and sugar until it dissolves.
Add plums and simmer for 20 minutes. Eat hot, warm or cold.
