There are traditional Portuguese recipes for salt
cod and rice dishes but I think that this adaptation of smoked haddock
kedgeree is especially good as the slightly oriental spicing and the hard
boiled eggs go extremely well with the bacalhão. All that is need
to go with this is a large mixed salad with some sweet juicy tomatoes
and peppers in it.
250g soaked Salt Cod
200g Rice
½ tsp Cumin Seeds
½ tsp Celery Salt
1tsp Turmeric
75g Butter
1 Onion chopped
2 hardboiled Eggs
fresh chopped coriander
100g cooked Broad Beans (optional)
Sauté the onion in 25g of the butter with
the spices then add the rice and shredded cod and stir around for a minute.
Add enough water to cover, cover and cook for 15-25 minutes til rice is
tender and water is absorbed. Stir in the chopped hardboiled eggs, broad
beans if using, coriander and the extra 50g butter cover and leave for
5 mins then serve.
