Grilled Sardines must be the quintessential Portuguese
dish. They are available in every beach bar and roadside restaurant and
are usually the cheapest thing to eat. Never attempt to cook them indoors
as what smells so tantalising on the grill or barbecue is less than pleasant
hanging around in the kitchen the next day!
The traditional accompaniments are boiled potatoes
and a tomato, onion and green pepper salad dressed with olive oil along
with some crusty bread for wiping the plates. Beer or Vinho Verde (try
the red) go down very well.
6-8 medium sized fresh Sardines
Coarse Salt
Olive Oil
Remove any scales from the sardines, rinse and pat
dry. Sprinkle with salt and leave for an hour. Rinse off the salt brush
liberally with olive oil and grill for about 3 minutes each side.
