This is a very simple recipe and the prawns or squid
take very little time to cook whether on the barbecue, griddle or under
the grill.
The boxes of frozen prawns which can be found in
all the supermarkets are ideal for cooking on the barbecue. If they are
fairly small ones it is a lot easier to thread them onto skewers before
putting them onto the grid as it makes turning them a lot easier and it
is a dreadful waste if they drop down between the bars! Frozen prawns
need defrosting before cooking but never peel them as the shells help
to protect the delicate flesh from the heat of the fire. Messy but very
good!
500g Squid cleaned and sliced if large (or raw Prawns
in shell)
1 tbsp chopped Red Chilli
1 tbsp chopped Coriander
1 tbsp chopped Mint
1 clove Garlic chopped
1 tsp Sugar
1 tsp Salt
1 tbsp Sherry Vinegar
1 tbsp Olive Oil
8 Spring Onions cut in half lengthwise and width wise
Make a marinade with the chilli, herbs, garlic,
sugar, salt, oil and vinegar and marinate the fish for 2 hours. Remove
from the marinade and grill, griddle or barbecue along with the spring
onion pieces turning once until slightly charred on the outside but still
juicy and tender within. Serve with lime or lemon to squeeze.
