This must be one of the most refreshing summer meals there
is. Feta is increasingly to be found in jars marinating in oil and herbs
although with the ripe tomatoes and black olives any slightly salty white
cheese can be used in its place. If something more substantial is required
make up a cheats hummus by whizzing a drained can of chickpeas with some
garlic and olive oil and serve on the side with crusty fresh bread.
1 crispy Lettuce
4 large ripe salad Tomatoes
1 Ridge Cucumber split lengthwise and seeds removed
1 bunch of Spring Onions chopped
150g Feta or other white sheep's cheese
handful of pitted black Olives
olive oil
white wine vinegar
Shred lettuce and place in bowl. Add roughly chopped
tomatoes, chopped cucumber and spring onions. Dress with oil and vinegar
and top with crumbled cheese and sliced black olives.
