A very hearty dish for big appetites or cold weather.
Quick and easy using tinned beans and tomatoes as given here or cheaper
and more kitchen warming using dried beans (remember to soak overnight).
As with all of these type of recipes there is no fixed recipe just whatever
sausages/beans happen to be at hand.
50g Touchino, chopped up small
200g Morcella, sliced
200g Chouriço, sliced
1 can Beans, Haricot, Cannelini, Kidney
1 can Tomatoes
1 Onion, chopped
2 cloves Garlic, chopped
1 Bayleaf
500ml Water
4 slices Bread
Sauté the touchino until its fat runs then
add the onion and garlic. Soften for 5 minutes. Add the drained beans,
tomatoes, bayleaf and water and simmer for 30 minutes. Add the chouriço
and morcella and heat for a further 5 minutes. Put a slice of bread in
the bottom of each serving dish and pour the soup over.
