Migas

 

This is a traditional Portuguese way with stale bread which makes a very hearty cooked breakfast. The ingredients below are just an example as it is a very flexible recipe.

400g day old Bread
Water
50g Touchino, cubed
50g Chouriço, cubed
50g Morcella, cubed
I small Onion, chopped
4 cloves Garlic, chopped
1 tsp Paprika
½tsp Cumin
3 tbsp Olive Oil

Remove any heavy crusts from the bread and cut or tear into 1cm cubes. Sprinkle with the paprika and cumin and about 2 tbsp water to dampen all the cubes. Heat the oil in a frying pan and add the touchino, when it is crisp add the breadcrumbs. Fry over a low heat for about 10 minutes. Add the chouriço, morcella, onion and garlic. Continue frying stirring occasionally until the bread is golden and crispy. Top with fried eggs if required.
