Salted Almonds along with cashews and pistachios
are widely available in the shops but they are easy to make at home if
a little more time consuming but infinitely more tasty and much fresher.
250g peeled blanched Almonds
Olive Oil
Salt
Cayenne Pepper (optional)
Simply sauté the almonds in a frying pan
slowly in a single layer in the olive oil moving and turning them frequently
until golden brown. Drain very well on kitchen paper and sprinkle with
salt to taste. They will store well in an airtight container for a few
days. Sprinkling with a little cayenne as well as the salt turns them
into Devilled Almonds.
