Salt Cod Cakes

 

Salt cod makes wonderfully tasty fishcakes. Make either small ones for starters or 3" ones for a main course. Serve with a tomato and onion salad; an orange and onion salad (qv) or a puddle of green sauce made by chopping a large bunch of parsley and/or coriander and moistening it with olive oil.

300g Salt Cod, soaked
300g Potatoes
1 Onion, finely chopped
2 tbsp chopped Coriander
1 Egg
Flour
Olive Oil

Saute the onions in 1 tbsp olive oil. Boil and mash the potatoes and add the onion and coriander. Boil the cod til cooked through, remove all skin and bones and shred. Mix the cod with the potatoes and add the egg. Form into balls or cakes and dip lightly in flour. Fry in olive oil turning once until golden brown.
