In some ways the recipes and ideas in this section are the most useful and can be infinitely varied and expanded. Most of them are just as good for a light lunch by the pool, as a starter or as part of a larger buffet style meal.

A meal composed of lots of little dishes, Tapas style, can make a good change and need not be any more work than a regular meal. Try to balance hot and cold dishes as well as some meat, some fish, some cheese, some eggs and some vegetables.
